Brown Rice Risotto

A vegan, low-calorie dish bursting with flavors.

Ingredients

Directions

  1. Chop onion and garlic. Sauté in pot with olive oil.
  2. Add rice, tomato paste, and seasonings.
  3. Add water and stir until tomato paste is dissolved. Bring to boil.
  4. Reduce temperature and simmer while covered. Stir occasionally until liquid is absorbed.
