No worries. Avocados work in a variety of recipes, they are very mild. They look odd, but they don't have a very dominant flavor of their own.

To tell if it's ripe, simply press your fingers in the sides. There should be a light give - maybe an eighth of an inch or so, but still a firm resistance. If it's too soft, cut it open to check - but an over ripe avocado isn't very tasty.

I buy mine hard and let them soften/ripen on the counter.

Cut the avocado in half around the long way with a sharp paring knife. You can just run your knife along the inner pit and turn the avocado until you come back to your initial cut. Then simply grab the avocado in one hand on the 'bottom' half of your cut, and grasping the top half, twist it. Then it will separate easily. To remove the pit, just take the same paring knife, whack it firmly into the pit, then wiggle the knife a bit to separate the pit from the meat of the avocado.

If you like guacamole, just chop up half an avocado, a slice of onion and half of a small tomato. Mash with a fork. Some lemon juice, a bit of salt - and you've got guac!! I like to add some chili or hot pepper for a bit of heat.

If you don't like guac, just chop half an avocado into 1/2 inch squares, pour your favorite salad dressing over it, toss and add salt and pepper to taste.

They also work well in a lot of smoothies and such. Good fats, protein and fiber.
