I am a carb addict, I don't want to be... it is my mother's fault... "here, sugar... this 6th heaping of mashed potatoes and gravy will not hurt ya!!!" and i learned early on... you don't say NO to your mother... she is bigger and swings a mean right hook. I came from GOOD german/irish/native american/hieght challenged/wide as we are tall stock. If you were thin in my house you went to the Doctor cause you was sick.

I grew up and went to college... Yep, I are a college educated woman...with a Master's degree. While working on my degree, I learned very valuable lessons....
1. Ice cream will not reject you when you say..."i like you to but....."
2. Chocolate may be an aphrodisiac but it is alot tastier than some men...
3. I can not only bring the bacon home, it don't make demands on my time or money!!!

Now all that sounds very anti-Male.. which I am really not. I mean I have been married 4 times. But...food has always been my best friend. And at 54 I am learning how to have a healthy relationship with my best friend. I may never learn that with men!!! It is just so much fun trying

Low-carb recipe for Christmas Party
Taco Meatballs

Ingredients:

* 1 1/2 lb ground beef (pretty lean)
* 1 package taco seasoning mix (Taco Bell, Ortega, etc.)
* 1 green onion, finley diced
* 2 eggs
* 1 clove garlic, minced (optional)
* 1 block sharp cheddar cheese, cut into small cubes

Preheat the oven to 425°F.
Beat eggs and mix all ingredients except the cheese together. Mold a Tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat.

Place on edged cookie sheet (sprayed with PAM) and bake at 425°F for 7 to 10 minutes or until meat is done and cheese has melted.
Serves 10-15 people. Less than 1 carb per meatball.

Rolling Eyes Cheese Puffs

Ingredients:

* 1 small pkg. (3-4 oz.) cream cheese
* 1/4 lb. sharp cheddar cheese, grated or shredded
* 1/4 lb (1 stick) butter
* 2 egg whites (room temperature)
* 1/4 teaspoon cream of tartar
* 1 bag (full size – 3-4 oz.) plain pork rinds

Melt cream cheese, cheddar cheese and butter in a double boiler or in microwave. Cool for 5 minutes. Meanwhile beat egg whites with cream of tartar until stiff but not dry. Carefully fold cheese mixture into beaten egg whites, being careful not to break down whites. Dip pork rinds into mixture to evenly coat and then place on wax paper or parchment covered plate. Let stand in refrigerator overnight.

Preheat the oven to 250°F.

Spread puffs evenly across cookie sheet and bake a slow oven, (250°F.) for approximately one hour, or until crisp. The finished puff texture is somewhat like a puffy cookie.

Total carbohydrates in recipe: 7.5 grams.

Bacon cheeseballLaughing

Ingredients:

* 1 pound bacon
* 8 oz cream cheese – softened
* 8 oz cheddar cheese – shredded
* 1/4 teaspoon onion powder
* 1/8 teaspoon garlic powder
* 1 teaspoon worcestershire sauce
* 1/4 cup chopped pecans or walnuts

Cook bacon; drain and crumble. Combine with rest of ingredients (except nuts) and form into ball. Roll in nuts.

Entire cheese ball has 13 grams carbohydrates.

induction measurements
hey Kelly, I know that I am a nut... but I measure and count everything. I started Atkins back and took it at its word that you could eat what you wanted as long as your carbs stayed under 20 carbs a day. Well, I lost some weight... I started at 275 in July 1... by Oct. 1, I had lost to 253...then I started counting my calories trying to keep to 1500 calories a day and carbs around 35... as of today I am at 220. Now, I gained 5 lbs at Thanksgiving... I took a 2 day diet vacation (5 lbs is the average weight gain at Thanksgiving.) The other thing that hampered my progress is my Hypertension medication, some medications will affect your weight loss on Atkins. But for me... the low calorie, low carb approach has been the ticket. I will have to say one of the most positive aspects of this approach for me is.. I calculated what my caloric intake would need to be to maintain my goal weight at my activity level... That is the amount to calories I am eating every day...So, over the time that I am dieting, I am reeducating me about what I can eat and how much and learning new ways to cook and new recipes...
