Could Atkins Bars make me gain?
It's a YMMV thing. All you can do is remove it and see how it affects you. Some artificial sweeteners will provoke an insulin response in some people, but not others, and glycerin doesn't seem to be well-studied. Your level of keto-adaptation may play a role too. I've only been using them now that I'm in a maintenance phase, and my main gripes are that the "meal" bars don't have nearly enough fat for keto, and most of the others taste like butts.

Also, whenever I've heard someone say "18 carbs" they've always meant grams. Not sure what wholefoodnut is on about.

Cooking with Stevia...
My experience has been that it breaks down, and goes bitter (and probably toxic) at normal baking and frying temperatures. Tested with both Stop & Shop store brand, and 365 brand from Whole Foods. Now I keep it below boiling, and only use it in things like coffee, tea, cold desserts, fat bombs. It's strangely potent in cream cheese, and comes out a more 'balanced' version of sweetness than in most things.

Net Carbs Calculation
I don't think UK nutrition labels say "Total" Carbohydrate, they say "Carbohydrate". "Total" Carbohydrate is US labeling, which includes fiber in the breakdown under the same heading. UK labeling has "Carbohydrate" and "Fiber" under different headings. Those are legal/policy standards, though, and you'll go crazy trying to make a system that satisfies every state's laws (e.g. A dictator might declare pigs are vegetables, and that would become law). From a technical/scientific perspective, fiber is classified as a type of carbohydrate, because of what it's made of, so it makes sense to include it under total carbs, and break out the subclasses from there.

How much is 1 cup?
The amount of ml per fluid oz depends on whether your recipe is using the US or Imperial system, since their respective "ounces" are different. Whenever possible, I try to use recipes that give measurements in mass, especially when baking. Google will convert units, though, if you search for "how many oz in 1 cup" it will bring up a calculator, and you can also convert between US and Imperial.
