How do I eat more calories without eating more carbs etc?

Answer: "More fat please!" One of the great pleasures of LCHF/keto, for me, is butter on practically everything!
Heavy whipping cream, butter, and ghee (clarified butter, milk solids removed), and pure coconut oil are 99-to-100% fat and, at 9 calories per gram (4 more than protein or carbohydrate), will increase your calorie intake.
Real full-fat cheeses (with no additives like sugar/starch) will increase calories, fat, and protein. However, you want to moderate protein consumption since, on a low-carb diet, the liver will convert protein to glucose via "gluconeogenesis."

I agree! But you need to accept first that fat is not evil and to learn what kind of fat suits your diet.
