Im Crystal :) Im a single mom of 4 little girls. my youngest is 2 1/2 months and before getting pregnant i was low carbing & insanity... lost a lil weight and bam. Awesome thing is, i still came out at a lower weight than i was when i got pregnant a week after having her. So here i am.. don't have time for the insanity now (maybe when she gets a lil bigger) so getting a jump start with atkins staying under 20 carbs. So encouraging to see the numbers dropping!! i want to be the fat i was when i thought i was fat :P i have a ways to go but im determined to not be the fat mom and to be able to run around with my girls and do whatever they want.. shoot maybe even share clothes one day ;)

3 Net Carbs per 1/2 cup:

Ingredients
•28 oz can Peeled San Marzano Tomatoes (no sugar added)
•1 Tbsp red wine vinegar
•1/4 cup extra virgin olive oil
•1/4 tsp black pepper
•1/2 tsp red pepper flakes
•1 tsp onion powder
•1 tsp garlic powder
•1 tsp dried basil
•1 tsp dried oregano
•1 tsp dried parsley
•1 tsp salt (add more if necessary)







Instructions
1.Puree the tomatoes, olive oil, and 1/2 cup of the liquid from the can in a small blender or magic bullet.
2.Stir in the remaining ingredients.
3.Taste and adjust seasoning if necessary.

Make sure you rinse the shiratki noodles very well. They have a nasty odor out the bag. And try the zucchini noodles if you haven't. I sauté them with garlic and olive oil and once cooked, they soak up the flavor of whatever you've made them with and do not taste like zucchini at all.
