Lemon Sole Fillets Served in Mushroom Sauce

Ingredients:

• A 1/4 pint of vegetable stock

• 110 grams of finely diced onions.

• Extract from one Lemon

• Pepper and Salt

• A 1/4 pint of sour cream

• 4 tbsp double cream

• 2 tbsp white wine

Method:

• Take the mushrooms and make sure that they are completely drainded, then cut them into small pieces. Once you are done, set them aside first.

• Take your diced onions and place them in a solid container covered with a foil. Place the container in your steam oven and steam for four minutes. The oven should be at a temperrature of about 100°C .

• After the onions are done, add the mushrooms you had sset aside and let them stand for exactly two minutes.

• Now take your Lemon Sole Fillets and place them in a soid container. Then drizzle them wiht the lemon juice and pour the white wine and vegetable stock over them. Place the fillets in your steam oven and steam them for about eight to ten minutes at a tempeartue of 90°C.

• Now take the onions, cream and sour cream and stir them gently into the Lemon Sole Fillets Stock.

• When serving, you will just pour over the Lemon Sole Fillets stock and yuo can serve it with rice.
