excercise tracking
You can alter the amount of time spent doing a particular exercise and it will lower the caloric burn amount. I've played around with this method and found it to be helpful.

New to this
I have found the glycemic index to be a fantastic tool in helping to choose what I eat, especially what time of the day, and before or after I work out. The glycemic index was initially developed for diabetics to track insulin spikes. It's basically a measure of the speed that certain foods spike insulin levels in your blood. Foods low on the GI have a minimal effect while sugary foods have a high spike. If you are exercising as part of your weight loss routine (which you definitely should, but talk to your doctor first), the GI index is your best friend. Get really familiar with it, especially the part about which GI foods are good to eat before and after exercise.

Bad Foods
I have found that anything called a diet didn't work for me. I eat a balance of everything and try and keep my fats to a minimum. That means carbs are in, as well as protein. On my "diet" fruit is awesome and a great food to eat right after a workout. Fruit also has lots of fiber which keeps you full for a long time and most doesn't get absorbed by your body.
I did a ton of research on all of the nutrition and weight loss info I could get my hands on when I started back in July. Today I went from a size 38, 205 to a size 32 175. I've been plateaued for a while and that weight loss occurred really over a 3-4 month period combined with an intense exercise routine.
My best suggestion is to do as much reading as you can about the Glycemic Index and exercise. What foods to eat before and after your workouts are critical. You actually want to eat sugar after a workout. Strange I know. I've seen the results first hand. I'm training for a half ironman now.

Help! I have a bum foot & cannot do any cardio workouts, need ideas!
I lost 5 pounds learning to swim my first week. Very low impact, but the hardest cardio workout I know. I'm training for a half ironman now. The pool will kick your butt.

No time to work out? Do what I did...
By the way, my weight won't move anymore. I hover between 175 and 178, but I'm a 32 inch waist and haven't been one since high school. My arms and legs are ripped and I did a leg press with 220 yesterday. First time ever lifting anything 200lbs!
