I am a elementary strings teacher in New York. I also tutor SAT/ACT students on the weekends. I love reading, and I play violin and viola in a community symphony when rehearsals do not conflict with my grad school classes.

Went primal on 3/14/11.

6 Month Goal: 126-115
Week 1 - down 3 lbs.
Week 3 - down 5 lbs.
Week 7 - down 7 lbs. (5 to go!)
6 Months Later: down 10 lbs. and about to push my goal weight even further down.

12 Month Goal: 115 (22% BF) to 110 (approx 18% BF)

I eat primal, which is an offshoot of paleo and allows for full fat dairy. If you do it right, it becomes a lifestyle, not a diet. Transitioning into this way of eating was one of the best decisions of my life and I can't see myself ever going back to the Standard American Diet. Try it for a month and see the results in energy and body composition and overall health Smile

Who's following a Paleo Diet?
I'm primal (the main difference being that I will eat full fat dairy). I started last February when I saw it mentioned on someone's FatSecret profile and it was the best decision of my life. I think that cutting gluten and added sugars is something that everyone needs to try, because it can have a significant impact.

The first week of paleo/primal is rough if you've been accustomed to a higher carb and wheat intake. However, after that the energy comes back and it is much easier to focus. Moreover, you can go longer between meals without feeling hungry.

It is definitely a great idea to follow the experts. I check www.marksdailyapple.com regularly, and listen to Robb Wolf's podcasts here.
The podcasts are especially helpful when I need to get back on track after a period of unplanned "cheating".

What should my percentages of Carb/Fat/Protein be?
I think this is really going to depend on what you believe in and what works for you. Personally, I keep carbs to under 20% of my intake, meaning protein and especially fat are going to be higher. Play around, do a bit of reading, and see what works for you!

What Diet should we use?
All of the things you mentioned have been improved, I believe, with a Paleo diet (and eating lean meats compared to fatty ones). Check out http://robbwolf.com/ and maybe listen to his podcasts, and certainly pick up the Paleo Solution book if you are at all interested. Best of luck!
