Help!!
Sheena,

I've been "casually" watching what I eat for awhile now, and am actually down 11 pounds from my all-time high, which was this year. I'm now more seriously watching what I eat and simply counting calories, watching portion sizes and walking more.

I'm not going to get overly gung-ho till after the holidays, but I think just keeping my goal and sensible choices in mind, I won't overindulge too badly during the holidays.

That said, I agree that <1000 calories is starving your body; do strive for 1200-1300ish. And THAT said, I'd be happy to be your buddy. I need buddies too!

Substituting Healthy(ish) Food for Non-Healthy Food
I'm also a huge lover of pizza and lasagna.

A couple weeks ago I stumbled on a recipe for eggplant parmesan. Now, I think eggplant is a gorgeous fruit, and every so often I try it ... AGAIN ... to see if it ever tastes like something other than linoleum.

I found this recipe on Cooking Light's website: http://www.cookinglight.com/eating-smart/recipe-makeovers/healthy-eggplant-parmesan-recipes-00412000068404/

Not only was it delicious, but I thought it made a decent substitute for lasagna! I only made a half-turn because the hub wouldn't touch it with a 10-foot pole. He doesn't know what's good, hehe!

Where is everyone from?
Rajah1973, you're not alone! I'm from West Virginia, the Buckhannon area. Consequently my food shopping is limited to Wal-mart and Kroger, and if I go to Weston, there's a better Kroger and a Shop-n-Save.

After seeing photos of myself taken Columbus Day weekend, my disgust with myself boiled over. So now I am embarking on paying attention to what I eat, recording it, and committing myself to exercising (baby steps). I have a friend to did very well on Atkins, and I toyed with that, but I simply can't operate by denying myself something. I can limit my calories, focus on healthy foods of all types, and get my lazy butt moving!
