suggestions for lunch, besides salad?
I like to heat up a can of black beans. A little grilled chicken or some other veggies balance out the meal. Another favorite of mine is to saute fresh spinach and fresh garlic in olive oil. It reheats well. I also grill up chicken in advance with different seasonings. Then I can have chicken and beans, spinach and garlic, etc. Of course there are also frozen SB dinners.

Sugar Free pudding
As for phase 1 ...

First is that no dairy is allowed. Just wait until phase 2. I think diet jello is ok. But who wants that crap. Wink

Also, it is permitted to use sugar substitutes, but a lot of people advice against it. Sugar substitutes cause sugar cravings and part of phase 1 is to kick those sugar cravings. I suggest you avoid any sugar substitutes in phase 1, or at least keep them to a bare minimum. They are allowed, but not your best plan. SBD really wants you to choose more natural whole foods as much as possible.
