I just joined so I haven't tried any of the recipes yet. But I do plan to. Also, check out Eating For Life by Bill Phillips. There are a lot of healthy recipes that a meat & tators man will like. Shrimp scampi is one of my families favorite.

Recipes from the site
Turkey burgers (I recently started using ground chicken), grilled meats, corn on the cob, green beans. It is hard, I am in the same boat. We eat a LOT of potatoes.

I am learning that it is baby steps. I cook the same food, just leaner and watch my portion sizes.

You can fix him a baked potato and fix you a sweet potato, no extra work, but, something different for you. Salad is also good for a one person side.
