Hi guys,
I just started the challenge nyself today. My life is a bit stressed right now, so all the more reason for me to set my mind to the mini challenges of veg, water and fibre. I am so glad I baked those Zucchini Frittatas now! Such an easy small meal that is veg rich. I have 2 portions left. Also I stewed some extra cabbage, carrots and broccoli the other night. I can quickly reheat those in a pinch.
