Just made this lovely recipe:
Zucchini Frittatas
Baked frittatas with eggs, ham, grated cheese, onion, garlic, seasoning and grated zucchinis (courgettes). Makes 4 serves. Each serve has at least 1 serve vegetables and leave out ham or add mushrooms for a vegetarian dish.
1/2 cup grated cheese
5 medium eggs
1/2 tsp garlic minced
1 dash pepper
1 dash salt
100 g ham, diced
2 medium-large zucchini (courgettes), grated
1/2 small red onion, chopped
1/2 serving =1/2 tsp chicken stock powder
In a large bowl, mix the grated zucchini, chopped onion, diced ham, grated cheese, seasonings, and 5 eggs. Ladle evenly into 4 individual baking dishes, or bake in a larger pan and divide later into 4 serves. Sprinkle with smoky paprika for an extra smoky flavour. Bake for about 20 minutes at 180°C until set and browned. Serve hot or cool and eat for breakfast, lunch, a snack or a side dish to a main meal.

Thats dinner for four nights. Sound delicious! Or lunch and dinner for two days.

I have made 2 batches of this recipe now. Must make some more tomorrow. I am added salad leaves and canned beans to things as well, to increase the veg.
