Note:
A mixture of vegetables lentils and whole grains. Substitutions like different types of vegetables, grains and beans make this a versatile recipe for whats in the pantry or fresh at the market. It's also a good base to add just about any kind of protean. I generally cook the whole batch and divide it into servings to use for lunch and or dinner throughout the week. Because its a wet dish it reheats well. Lots of these items can be purchased cut up if you are in a time crunch. Chilly powder cumin or Italian seasoning can be substituted for the curry sauce when your taste buds need something different. Have fun.
