FOR TUESDAY, 2/13/18 - My husband (who had been sick, with no appetite, for about 4 days), wanted a sub sandwich today. So, I bought all the ingredients, including a big loaf of French Bread, which I cut into 4 pieces, using half to make 2 big subs for him, and I froze the other 2 pieces. For myself, I measured out precise grams of salami, black forrest ham, bologna, the Provolone, tomatoes, onions, pickles, and cut it all up with 2 Tablespoons of Mayonnaise on it. OH NO! As I was looking back today (2/14), I realized that I never entered the 55g of LETTUCE! I'm not going to fret over that, even though it put me slightly over 30g, because it was an HONEST mistake. I just went ahead and put the lettuce on TODAY's stats, so they WILL be figured in. (I'm not recommending that people DO this -- I just know that I did not INTENTIONALLY go over, and I would NOT have, if I had already entered the lettuce!) Anyway, my Sub Salad was delicious, and I didn't feel the least bit deprived!

I had made sauerkraut (which my husband LOVES), and asked him if there was anything he would like me to get to cook with it. (I already have some fresh green beans that I'm going to cook in some country ham today.) He wanted pork and mashed potatoes, so I spent a lot of "Exercise & Activity" time searing the pork roast, washing & slicing the fresh mushrooms & onions, and cooked that in the crock pot all day (for today). I bought some of the refrigerated mashed potatoes that you cook in the microwave, and I will either stay away from those altogether, or I will work today's food choices around being able to allow a small amount. I'll also be making some pork gravy.

I MUST admit, it is MUCH harder keeping things in balance while trying to work in fresh fruit! I bought a 3-lb container of actual Welch's red seedless grapes for my hubby. (I've been more indulging to him while he's been sick!) I tasted one in the store (to see if they were sweet), and then had one more at home. Today, I'll wash them all and make them ready-to-eat for my dh, but it will be a challenge for me to stay away from them. That's ok. Challenges are GOOD. "God will not tempt you above that ye are able to bear; but will, with the temptation, also provide a way of escape, that ye may be able to bear it."

Looks and sounds. I was a Subway kind of gal before keto.I have to remember they have Subway salads. Also, they'd make it without bread. Thanks for the idea. 💕

@JackieSpahr, last night, I only had less than 2 carbs left for the day, and I was hungry. SO, I cut up JUST the meat and cheese (no lettuce, tomato, onion) with some mayonnaise on it, and was able to get one last filling meal in for just 1.85 Net Carbs!
