Bummer.
Too many calories in the stuffed peppers.
190.0 lb Lost so far: 72.0 lb.    Still to go: 60.0 lb.    Diet followed reasonably well.

Here's the thing: you are eating so little that you might actually want to raise your calories, which may make it easier to stay the course over the next 60 pounds. A friend of mine with Type 2 just went through a consultation with a nutritionist who specializes in working with insulin resistant women. My friend had been restricting herself to 900 calories in order to lose weight -- and she would lose a certain amount and then the loss would stop. The nutritionist told her to trust her and start eating 2200 calories per day, which she calculated based on my friend's age and level of activity. Guess what? -- she's losing 1 pound per week now. I'm not suggesting that you eat 2200 calories per day, but I'm wondering if bumping your calories up but keeping your carbs down might help you continue with this process. I've found something similar in my own routine: I used to be convinced I had to stay at 1200 or below to lose weight. But I've lost most of my weight over the past 5 years at 1350-1500 calories, but with lower carbs and higher fat than I've eaten in the past. It's just a thought...

Well stated. I agree that this is true, and many are not aware of it as it seems counterintuitive. Research supports this.

When you keep your calories consistently near /at / below your metabolic baseline ... your body will believe there is famine (and there is - since you aren't consuming enough to thrive), so it will become extremely efficient with the fat stores because there's no telling when it will get more. Your body will start to hoard fat and lower your metabolism to conserve what it has.

I'm going through that now..... having to consciously eat more (because I haven't been hungry).
