I guess today's weight gain is from the impromptu (and very forbidden, but oh, so tasty) Indulgence Day on Wednesday. It's not unusual to see a two day weight gain on something like this, and boy did I go nuts. Oh well.

I am up a good chunk again, to 78.8 kgs. In the big picture, it's really not too bad as long as it stops here. I'm well under 80, and I can creep back to 77 soon again. I do miss the stability around 77 kgs. I don't feel that I have really found it yet, and have only been UNDER 77 for one single day. Hopefully I will get there soon, and stay there.

It's quite a task to get that low, I gotta say. I think my body is more or less comfortable where I am now, and the excess skin of course weighs quite a bit, weighing me down. If you see my upper body, you'd be surprised how skinny I am, other than the loose skin. It's borderline creepy for me to look at sometimes.

I can feel my ribs. In detail. I can see all the veins in my hands. I can grab my Adam's apple. I can see the muscle toning in hands, arms, legs etc.

Now, this is not complaining. Actually, I think it's pretty cool, but it's so otherworldly for me sometimes. I still have to get used to the new guy in the mirror.

Anyways, on towards 77 again. Today my breakfast was the usual, and lunch will be leftovers, as usual. Yesterday, we had cod fish in a mustard sauce - REALLY delicious. The King took over the kitchen and did this dish. It's actually a traditional new year's eve dish in Denmark, but I haven't had it in about a decade. I think last time was the 1999/2000 New Year's Eve.



Regardless, it's not something I want to eat every day, but Wife bought cod and I thought it'd be fun to introduce her to this dish. She liked it, but as expected it isn't something we're gonna cook on a weekly basis. That's okay with me.

Today, it's Friday! This means a shorter work day - though I have a LOT to do. I have things that needs to be finished very soon, and I will focus on those today. I also have one interview - no biggie.

I may have to work some hours through the weekend to catch up - we'll see how far I make it today. Hopefully I can take the time off. I think I deserve it.

I got a message that there is mail waiting for me at the post office. I think my ice cream maker is in! I will stop by today to pick it up - let's hope that this is the one. I'm curious to get started making my own ice cream, and getting started developing a good, low calorie version. It's a good thing that the bowls needed has to freeze 24 hours before use, this way it limits the "going nuts factor" for me. :) Still, low cal ice cream here in Denmark is ridiculously expensive.

Does anyone have any good recipes for this? I'm not even sure how to approach it, but hopefully I'll work it out. I know my buddy JP is on this same mission, and it'd be great if anyone has some experience to share.

Of course, the alternative is to instead make PROPER ice cream, and just not go nuts in it. But this is where things get tricky sometimes. The good stuff gives me an urge for more, and I don't want that. I want "good enough" to be satisfying, low calorie, cheaper than what I can buy. It doesn't have to be amazing, just good enough for me to survive on. Actually, sometimes this makes it a little bit easier, doesn't it? :) I mean, it's easier to say no to a 2nd helping of something "good enough" than it is to say no to something amazing! :)

Tonight there is no band rehearsal. This is no good for me, I miss playing with the band. It's the 2nd Friday in a row where it's canceled. I am so looking forward to next week and getting going again.

Also, it's not good as I normally lose quite a bit of weight after band rehearsals. I do things differently, and I see results. I've tried to copy it at home, but it just doesn't happen the same way.

Had it been a "normal" friday, I'd be positive about being under 77 or just around by tomorrow. I've done it many times before, losing 3 lbs overnight from Friday to Saturday. This week I doubt it.

Still, I am no longer in a rush to get anywhere, other than to stay where I am. I need to get used to this new mindset. I think I mentally still look for 77, and that's not a bad thing at all, I just gotta remember that it's okay that I am not 100% there, as long as I don't gain over and over. I'm comfortable with being 78.8 today, very happy to not be in the 80's.

Today, I am thankful for:
- NOT being in the 80's. :)
- Friday.
- Package in the mail.
- Getting to spend the evening with Wife, now that I am not playing music tonight.
- Amazing and insightful comments in yesterday's journal. Thanks!

Good journal King. I have had my Ice Cream maker for a few days now. I will PM you a recipe I found that I will try today for a lowfat yogurt. I too am tempted to go proper. I bet you have access to all kinds of cream where you are. I am looking at problem getting any lowfat ingredients like condensed milk, or lowfat half and half. I suppose I oculd make it if I knew how. They dont do much lowfat/lowcal here in the desert. I am excited its Friday too! Going shopping and eating indulgence foods as soon as I journal!

How exciting - an ice cream maker. I don't have cravings for ice cream - but know if I bought, and made ice cream, my hubby would never be able to leave it alone. I bet when you have your skin surgery, you will find the 'excess skin' weighed loads..... So interesting to see what the end 'weigh in' will be (after surgery). Could be that you will be 'under weight'.... That would be funny!!! Mind you, I would imagine immediately after, you will retain quite a bit of water weight. Have a good day - sorry about band being cancelled again - I know how much you love it.

Ice cream's not something I crave but I hope you find recipes you'll enjoy. I just watched a guy making an instant frozen yogurt on TV - frozen raspberries, a little sugar to taste, yogurt (could be low fat) and whizz in the food processor with a very little quantity of icy water. Ready to eat right away! That got me to thinking that maybe your high fibre laxative smoothie would make a palatable frozen dessert? I imagine that once you get started you'll be coming up with new ideas all the time. Enjoy...but don't indulge too much! I can see portion control being an issue - if you've just made a litre of ice cream some of it needs to go in the freezer for another day!

Good Job King! I struggle with the daily fluctuation, as much as 5 pounds from one day to the next. Has been that way since I was pregnant with my daughter. I'm glad you are happy where you are. Keep it up! And have fun with the ice cream maker! Have a good weekend!

Sorry guys, sorbet is not for me. I have, however, found some really low calorie creamy products that I'm gonna test out. I can make the ice cream lower than anything I can buy.

I am with ya, King. I budget in my calorie allotment sweet treats that make my heart sing. I too choose the low cal versions when possible and IF they are excellent. I don't want to waste time or calories any more on foods that don't rock my world. Hope your day is sweet as a sundae...with a cherry on top. :)

Get sugar-free jello pudding (70 cals) and if it is chocolate you can add 1tsp of coaco powder. just toss it in and let the icecream maker do its magic. Remember that icecream is nothing but frozen pudding. I have also used greek yougurt and added fresh berries with some splenda or stevia. you can experimet with adding some protein powder, but dont forget the berries. I once made some with vanilla puddig and added blueberries and sugar free blue berry syrup. I also use the sugar free coffee flavorings to flavor it. Good luck.

I have heard a few suggestions on adding healthy puddings. Lots of good ideas and dialog here in this thread. Since your only making a few quarts, a few experiments may be in order. I am quite pleased with my 1st attempt today. Any better and I might be in trouble ^^. Good luck King, I am sure you will do fine.

i LOVE my ice cream maker. I have one that connects to my kitchenaid mixer and it is amazing. I have done yogurt with berries, I have also done some ice cream variations. When I get home I can send you a few recipies that I have tucked away in my recipe book. I hope you enjoy your ice cream maker as much as i enjoy mine. I keep my bowl in the freezer at all times just incase I get the desire to make some I don't have to wait for it to freeze.

Sorry, again. No such thing as sugar free puddings to be bought around here, unless I want to pay a fortune for them. I don't. It's a great suggestion, though. I miss my days in the US when it comes to these things. Such a huge selection of everything. Here, if you want stuff like that, you gotta make it yourself in some shape or form. :( For now, I will experiment to make something I like, and go from there. I've made a reasonably good mix for my first ice cream (waiting for the bowl to freeze), and it's not bad. Only thing is that the "sour" taste of plain yogurt kinda shines through the chocolate. I wonder how I fix this?

I feel you bro, not much low fat or healthy stuff her either. Strange. Its also kind of gratifying to "walk between the raindrops" to get make healthy choices. Need to listen to some Donald Fagan now. XD

Chocolate Ice Cream Ingredients 2 tablespoons unsweetened cocoa powder 2 tablespoons vanilla (sugar-free) syrup 2 tablespoons chocolate (sugar-free) syrup ½ cup skimmed milk 1 teaspoon gelatin (plain). 1 cup low-fat whipping cream 4 teaspoons non-caloric sweetener (optional) Method Soak the gelatin crystals in ½ cup milk. Heat it after half an hour in a saucepan and slowly stir in the cocoa powder. Remove from heat and mix well. Add all the remaining ingredients and pour mixture into the ice cream maker. Serve either plain or with low-cal vanilla sauce.
