Little by little...
I had heard about a Portuguese dish called Piri piri, a spicy roast chicken, so when I was shopping for Sichuan peppercorns and saw the spice mix for it, I got some. It's so fragrant, it made my whole mailbox smell good!
I didn't feel like firing up the grill last night, so I sprinkled some of the mix on a chicken thigh, and let it dry-marinate for about an hour, then pan fried it in butter. When it was cooked through, I added about 1/3 cup of coconut milk, and let it reduce. It was SO good!

Is it something rude, April? Maybe many Portuguese words are rude in Greek. Think about the city in Malaysia previously a Portuguese colony - Malacca ...

Next time try it with a fresh coconut. So worth it! The coconut probably tamed the spice mix, too. I use it in many curries, both Thai and Indian, which adore peppers.

Thanks for the giggles and comments, friends! :D I like a little spice (heat) in my food, but I still want to be able to taste it, too. I dumped quite a bit on the chicken before I tasted it, and let it stay on for the full hour. But I did taste the mix before I cooked the chicken, and rinsed some of it off when I realized how hot it was. After cooking, it was exactly right for me in terms of heat, and the other spices has absorbed into the meat, so it tasted great! @Sss, it probably is better with fresh coconut, but right now I'm in a place where it's a major achievement to cook for myself at all, so going to the effort of processing a fresh coconut ain't gonna happen. Besides, they aren't all that common in these parts, and deadly expensive when you can find them.
