I've been seeing recipes for low carb bread, so yesterday I decided to try one. 3 minute bread in a mug, with almond flour. It's not great, but it's not bad. On its own, I don't think I'd eat much of it, but as a sandwich, when I'm really craving a sandwich, I think it will be ok. I need to get a wider mug, though.
I slept a full 8 hours last night. Unfortunately, it was in 2 shifts...from 9 PM to 1 AM, then back to bed from 5 AM to 9. UGH. I hate not having time in the morning. I need to get ready for work, like NOW.
Strong storms are expected here today, so roads might be dicey coming home.

If you're really after a low-carb bread, I would recommend a flaxseed meal muffin that you can also make in a mug. I eat it most days, but then again, I love that slightly nutty taste. There are ample recipes for it, most called something along the line of Minute Muffin or some such. Mine is simply 1/3 c flaxseed meal, 1/4 t baking powder, 1 egg and 1 T butter or margarine (whatever your preference for taste OR fats). Stir all in a mug until completely mixed (then I usually use my hand to pat it down to the bottom of the mug. Cook 1 minutes, voila'.... bread, lol. Nice thing? it has ZERO net carbs.. it's all fiber, so it's good AND natural. I usually slice mine in 4 slices. it can be toasted, or reheated. It can also be spread really thin, cooked in the oven and broken into crackers. It will hold up to an "EggMcMuffin" easily. ANOTHER note... if you are craving a sandwich, my all time fav is CarbBalance Whole Wheat (or not, lol) Tortillas....... fantastic, can't tell them from any other flour tortilla. I use when I have a sandwich craving, or when it's taco night at my house. Bon Apetite!

Oh that broken 8 hours doesn't sound good to me. But I don't sleep well anyway. Hope it's better for you very soon Kes 😴😴😴

@Gina, I like the taste of flax-seed meal, but the texture does turn me off a little. I'll sure try your recipe, though! Thank you for your input. I really like the Carb Balance tortillas. My go-to meal on busy days is a quesadilla made from them.

@Mrs Maths, Last night was an anomaly, brought about by getting up WAY too early yesterday morning. Doesn't it just figure that on days off, I get the rise-and-shine bug, but on work days, I want to sleep all day? LOL! I should have taken a nap after getting up that early, but I MCT oil in my coffee, and it kept me energized all day...until I fell asleep in front of the computer at 8:30. *sigh*
