I've been cooking my (increasingly) little self off, mostly things I cannot eat. I made 500 ginger snaps over the weekend for distribution at a seniors event. Yesterday, I made a "test" Christmas pudding, using a new recipe that I didn't want to serve on Christmas without a test run. It was the first time I made the pud in a pressure cooker. Apparently it was a success, so I will be making two more of them on Christmas.

We have Xmas dinner next door at our best friends/neighbours. I am bringing the pud, salad, roast sweet potatoes, roasted brussels sprouts, a vegan dressing, and cranberry sauce. My friend is making the mashed potatoes and lobster, non-vegan dressing, pie, and turkey. On Boxing day, I am making a turkey for my husband with all the sides, and more yummy veggie based food for me. Next door it is ham day, so I will be making sides for that meal.

These neighbours are great. They totally get that I don't eat animal products and dig in with glee when I bring something unusual and plant based for them to share. It helps, I think, that grandma can't eat dairy or eggs and she can eat (and loves) everything I bring. I make a lentil loaf, that with the addition of some water sauteed onions and celery, chestnuts, and the correct spicing, makes a great "dressing". Grandma will love it (and so will I). It will be my main dish, and a side for the omnivores.

My goal is to have fun with family and friends and to feel good about how I ate when it is over. I was pleased that I lost more weight! I am now less than 13 pounds from officially going from obese to overweight. I imagine that will happen some time in January or February.
