Jada Petsch's Journal, 28 April 2011

Got up at 5:45 this morning to go walking. And the weather thwarted my attempts at an early not gruesomely hot walk. >.< Darn rain. Even stayed up for 5 mins or so waiting for it to Stop sprinkling, but no luck. lol. When it really picked up the pace I forfeited and went back to bed. If it's not horribly humid and hot later, i'll go for a walk while monster little is down for her nap. :)

Got in 3 miles yesterday at the park, came home feeling hot, dry, and rather mummified. It was 93 out, but the wind made it fairly comfortable, and I took the long track that's shaded 1/2 the way. I'm going to end up with one hell of a farmer's tan this summer. lol. Tannest I've been in years. Though my legs still look deathly white.

Seem to be working off Easter weekend 1/2 pound a day. I know I'm retaining some water, but it's not wanting to drop quick. >.< I can feel the retention in my hands. Could just be hormones too from the tail end of my period too. :/ Hopefully my body will work it all out soon and start working like clock work again.

Going to work on more laundry today. Need to wash just about all my workout shirts...thought I had washed them all when I did the pants...that or the 2yr old pulled them out and put them in the dirty clothes hamper. *sigh* She gets putting clothes in the hamper...but not leaving the folded ones alone. Think I'll do bedding today too. :) Nothing like just washed clean sheets at night. ^.^

Might be trying a new recipe tonight too, one that involved eggplant. Hubs won't try it since he maintains a hatred of eggplant. I've had good and bad experiences with eggplant over the years, and figured what the heck, lets give the recipe a try. Might just make 1/2 of the recipe, then get the stuff to try the ratatouille recipe I found recently.

Time to log breakfast, work out my meals for the day, and put some laundry on. :) Have a Terrific Thursday Everyone! :D

Trying my darnest. No walking today with the tornadoes going on though. I'd worry my Mom half to death if I did. We did have one hit in our county though. O.O There was a really nasty one in Alabama too.

Going to do some major tweaking to the recipe I'm cooking tonight. O.O Considering it comes out of a book that name is basically the Best of Southern cooking. XD Also making it in the little creme brulee dishes we have since it'll be easier to control portion size.

fun!My girlfriend is from AL-and her s.o. is from Tuscalooga.Very heartbreaking.Especially since she still has ptsd from the tornadoes in 98'.Hard sometimes to be "there" for them just by phone and online.So,yes-do not worry your mother any more than necessary. Southern cooking does sound good!Although, southern cooking and diet seems like an oxymoron.Great concept to control portions with the small brulee dishes!

My cousin is in Tuscaloosa and my family was worried about him. He stayed in the basement of the building he lives in. I hope your friend is doing well too. Not all Southern cooking is bad. lol. But it can have alot of oil in it sometimes. ;) The eggplant is suppose to be breaded and fried. But I'm going to use a little olive oil instead of deep frying it. Hopefully it holds up well. Then I have to layer the 'fried' eggplant, homemade marinara sauce, and cheese in the creme brulee dishes, and bake it together. :) I've had eggplant in the past, but it's always been either really good, or really bad. XD lol. Hoping this one turns out well. Pairing it with some left over chicken. I think most of the calories will be in the eggplant dish though.
