Debbie Cousins's Journal, 13 July 2021

Recorded everything yesterday except TWO nachos. They were in the small Tostito scoops, with about a teaspoon of crumbled cooked sausage and a teaspoon of cheddar cheese. My husband was making himself a whole plateful, but I was able to be satisfied with only making two for myself.

Haven't been drinking my water lately. Today, though, I just finished with my fourth 8-oz bottle (noon). I think there's hope for getting them all in today, hallelujah! I think that one of the reasons my knees have been hurting the past week or so is that I've not been getting in my water. Guess I'll find out by whether or not they feel any better tomorrow.

Thankful I was back down by 7/10ths of a pound this morning. Still not where I'd like to be, obviously, but at least I'm headed back in the right direction again.

Just had ONE Pepperidge Farm Classic cookie (the small ones, not the nice big ones in the 8-packs). Yesterday, I had 5 cookies, and the day before that I had six. My husband has eaten most of the ones I like, and he'll probably finish off the rest of them today after lunch. All he'll have left after that are Ginger Snaps, which I can totally live without.

Well, I just went online and bought him some LU PIM's English Orange Biscuits (cookies) like my daughter had bought him when I was fasting. They only had them on Amazon Fresh, but at a reasonable price. I've never ordered from Fresh before, but my son does it all the time. I ordered enough stuff to make it $35 (free delivery), and will give all of the other stuff to my son. They are out of money, with no income, so I've been helping them out with groceries every week (and we've been paying for doctor visits, and other bills that have come in). They NEED an income! Both my son and his wife have a host of physical disabilities that prevent them from being able to hold down a job. He has Ehlers-Danlos Syndrome and severe plaque psoriasis. She also has EDS, and POTS, and endometriosis, along with depression, I think.

Husband wants baked potatoes for lunch (I'm eating 1/2 with cheddar cheese and some Ranch dressing) with fried clams (which involves tartar sauce). I forgot to weigh the potato before I put the cheese on, but I'm pretty sure I have about 35 g of cheese, so I'll weigh an empty plate and then figure from there.

Looking forward to seeing if my grandson will jump off the diving board at the community pool tomorrow. They will be so surprised that I am taking them there! Only one week and 2 days until Great Wolf Lodge. Guess I better start packing!

Sounds like you are doing much better and still enjoying some of the things you enjoy!!! Don't know about your knee issues, but a young friend had to have both knees replaced and they wanted her to wait about 10 years as she wasn't even 40 yet. They told her to take Omega 3-6-9, she took 2 pills 2- 3 times a day and said it was the first time in years she didn't have excruciating pain. Hubs and I take one 2x daily and have reduced his knee and my hip pain greatly. Something you may want to check into. Have fun at the pool tomorrow!

Debbie, I think you should continue with your physical therapy for your knees. If you're in pain, tell them....maybe they will have some advice. Also, record EVERYTHING you eat...every bite. That way if you want to refer back to what was working or not later you have an accurate accounting.

You're right, @SherryeB. With a little effort, I was able to figure out the baked potato half that I had already put cheese on before I thought to weigh it. The hardest things for me to figure are things that can't be measured in grams (like Ranch dressing or tartar sauce), so I pretty much guess on those, but I try to be honest about my estimation.

you can totally measure those things in grams. weigh a teaspoon or tablespoon and then you'll know. I do it with maple syrup and it keeps me honest.

Purchase the Ranch dry mix and instead of mixing it with mayo or buttermilk use non fat greek yogurt thinned with a little water. You could put a cup of that dressing on your salad and only add 100 calories. Good Luck !

I measure everything. For my salad dressing, I put my whole salad bowl on the scale and zero it out, then put the dressing on til I get the amount I want. Same with any other condiments.

@Rckc, I had checked before for Hidden Valley Ranch Salad Dressing (though I make mine from the Buttermilk recipe packet), and it only gave measurements in Tbsp. and ml (which aren't measurable on the scale). I just went in and RE-checked, though, and SOME of the Ranch dressing entries DO give measurement in Grams! THANK YOU! I will be using that method from now on for calculating my Ranch consumption. I also see that there is a Gram measurement for butter! Trying to measure out a Tablespoon isn't as precise as I'd like it to be. Now, I can zero out the scale with the toast on a saucer, and then put on my butter til it measures equivalent to 1 Tbsp. Still learning new things at 66!

I'm sorry to hear about your son and daughter-in-laws infirmities. It must put a lot of stress on you and your husband. I'll be praying they both find a job that they will be able to do so they can get some type of regular income.

Have you tried Skinnygirl buttermilk Ranch (10cal per 2tbs) or Walden Farms Ranch (5 cal per 2 tbs)? Both are sooooo good!

@katsolo, great idea! @crazycatchick, I've never tried Greek yogurt, but it would be worth it to try it out if it enables me to to be able to have larger quantities of dressing on my salad - Greek yogurt going on my grocery list!

@Betheroo, haven't tried either of them, but I've used the Walden Farms zero carb pancake syrup and it is great! Will have to check both of those out. Right now, I'm adding about 200 calories in salad dressing to a salad!

RC, I had commented most exactly what you did how I measure everything & accidentally deleted it 😊 Debbie, Bolthouse Farms also makes some dressings that are pretty good. They're yogurt based and are around 45 calories for 2 tbls. I've tried the Ranch, Blue Cheese & Cilantro Avocado. Something else I've learned is we don't need additives or less of them for many foods to taste good. I used to use a lot of salad dressing, mayo etc. I have cut back on them & now I don't even like that much dressing, etc. on my salads & sandwiches. Fruit doesn't need additional sugar ...it's naturally sweet.

Good job. I have a cousin with POTS and she has so many other health issues too. I'm sorry you are struggling with it. The IVIG infusions help her some, but she still has too many fainting spells, and had too many concussions to count. I'm sorry you are dealing with it. Hang tough.
