Debbie Cousins's Journal, 02 March 2021

Weight is the same this morning. BUT, the sun is shining and the sky is mostly blue -- first time in 5 days that we've had any sunshine. I'll be glad when Spring finally comes, and all these barren trees get their green on. I went out and did about $50 worth of grocery shopping this morning, and ran a few errands for my husband. I didn't WANT to go out, but it did speed the day up some. Going to make some pork chops and sauerkraut in the Instant Pot for dinner tonight. Usually, I can't eat pork chops because they are too dry, but I'm going to cook them using the recipe I used when I made the pork ribs several weeks ago - with apples, apple juice and onions. Hopefully, they'll be nice and tender like the ribs were.

My husband said he was traumatized by all the dry pork chops he had to eat growing up. The thin ones really don't take as long at all. Have you tried marinating them?

I use the mushroom soup, some wine, and fresh mushrooms.

I prefer bone in chops because they don't dry out as fast....and don't overcook them.

How did the dinner turn out Debbie?

I hope your dinner turned out. I but thicker cuts, with the bone in. One of our favourite ways to eat then is baked in unsweetened coconut with a bit of curry. Yes, I know I am so ready for spring 1 more week and I will start some bedding plants under the grow lights.
