Well, back down another pound this morning, and in Ketosis. Still have one more pound left to lose to get back down to where I WAS. I could kick myself in the butt for cycling OUT of Keto after only six days. I'll probably go at least a month before trying that again -- maybe considerably longer. Gave away a bunch of Jackstraws yesterday, to get them out of the house. Still have a couple, but I'm TRYING to not have one today. Had TWO yesterday, but was able to still stay within my Net Carb range. For whoever it was that asked, Jackstraws are just Butterscotch Chips melted with a cup of peanuts and a small can of Crunchy Asian Rice Noodles stirred in, then dropped by about 2-Tbsp lumps to harden. They're really good, but hard to pass up when they are in the house. Hopefully, my husband finish off the last couple today.

Only drank TWO cups of water yesterday! Today, I'm going to shoot for 10-12 cups (80-96 ounces). Enjoying my two boiled eggs mashed up with 2 slices crumbled bacon and 1 Tbsp. DUKE's mayonnaise (the ONLY mayonnaise!) Hope I won't tire of it anytime soon, because it is very quick and easy to make.

Today, I'll be looking for some Keto Instant Pot recipes that I can try this week. I've got a pound of grass-fed ground beef, four boneless pork chops and 1-pound of free-range chicken breasts in the freezer. I've read that you can make meals directly from FROZEN, and I might try that.
