kimchi is finished and we had it on our eggs today. It is delicious!

Glad this batch turned out good. Sounds good on eggs, never tried that. Yummmmy! Update: told my dietitian about kimchi last week and she was going to look into whether it fits into my diet (low phosphorus/potassium). None of the ingredients seem to be a problem, but maybe she was wondering about the fermentation process. Anyway, I really appreciate your writing the recipe and I have it written. If dietitian approved, I'm asking for an Amazon gift card/or ask my roommate to purchase the starting materials for Christmas. Would like to try on burgers, too.

binkytexas, there are two recipes that I have posted items that are for fermenting. One is kimchi and that one is made from cabbage, One is kombucha and that one is made from tea. Both are pretty inexpensive to make and I buy the ingredients at the grocery store. The other recipe I think was for the seed Bagels. Those ingredients are the ones that I buy off Amazon and because I buy in bulk they tend to be expensive in the beginning. those last a long time and the bagels are the best I've ever eaten. Please let me know what recipe you're talking about.

binkytexas, my friend keyten sent me a link for a YouTube video that showed the process of making kimchi. It is probably the most involved process of the recipes that I have shared. we make ours a little differently but basically the same concept. The probiotics that are in kimchi and kombucha are very healthy for you. that's why we make it. it's just the wait time on these two items that is a little difficult. It's so good we want to eat it right away. Let me know what recipe you're talkin about that you wanted to get off of Amazon. These two recipes you just get at the grocery store and they're not that expensive. I buy the starter on Amazon to make the kimchi and we just do it because we're in a hurry. It's not necessary but it's just faster. if that is what you're referring to I understand.

binkytexas, now I remember posting the picture of the starter box. It was $22 on Amazon. I think that's what you're talkin about. the items that you would need for the recipe or at the grocery. I was forgetful in a little confused. you really don't have to use that starter. The salt will make it start the fermenting. let me know when you get ready to make it. I will send you the link that keyten sent to me so you can watch the girl make it.

I'm going to talk to my nephrologist the next time I see her. I saw some articles about the benefits of probiotics like kimchi for those with CKD. My dietitian said its too high in potassium, but I really watch my potassium and avoid potatoes (ETC) foods high in potassium. Even one cup of kimchi is well below my daily potassium. She didn't approve of kombucha until I pushed her...she keeps asking if I feel faint, have itching feelings, or nausea. Now she says that's okay if under a cup a day. If I go to her with the results of kimchi/CKD AND talk to my nephrologist, maybe she'll change her mind.

I also told her that I want to make it myself and shared the ingredients (THANK YOU) that you posted. She told me that would be awfully expensive to make. I let her know that I was going to ask my roommate to get the starter fermenter/jars/lids as a Christmas present. I really like my dietitian and just feel that maybe getting a positive opinion from my nephrologist will help. Who knows...maybe I'll get her to taste some kimchi herself. :) Thanks for everything.

binkytexas, if you watch the video you may notice that they use almost the same ingredients as I wrote down but they put them in the blender and make a paste. She does use a half a cup of red pepper flakes and that would be so hot. I just use a tablespoon and it's plenty hot for me. You can adjust that to whatever your taste is. she also uses the radish the ginger the garlic in the blender. she cuts up the green onion and puts it in with the cabbage. I don't think it went in the blender because it didn't cut up that much. Anyways good to watch the video to see what she's doing.

Still waiting to see my nephrologist. I don't think my dietitian has ever had kimchi, but I want to have approval before I ask Santa for the starter stuff. Hope you are feeling better tonight.
