cocobutt's Journal, 19 August 2010

Things I learned yesterday: It's best to grind whole flax seeds, not eat them whole. A frozen banana is a pretty great substitute for ice cream. I added a little crumbled extra dark chocolate and some coconut and almonds on top. It was fab!

Also, hubby invested in a pressure cooker, mostly for bean cookery. A few weeks ago, I made black beans from dry, which took a couple of days of soaking and cooking. This cooker should be able to knock them out in less than an hour! Last night he made flageolet beans, which are a French favorite -- fantastic. Sort of like a cross between lady peas (aka cream peas) and lima beans. Last week, he made cannellini beans, a favorite in Italy. Those were fabulous too. I'm sure the vegans out there knew this all along.

One last item: No dairy in the last 2 days and I definitely notice the difference. No raspy breathing.

And another last thing: I now know what it feels like to put on the next-size-down pants that had been collecting dust in my closet for the last 5 years. They slipped on easily! I almost wept!

3:30pm -- Ack! I'm having that same phlegmy throat problem. I had some left over tuna salad at lunch that may have had a little yogurt in it. But very little. I don't know about this.

The frozen banana concoction sounds amazing! This will be something I plan on trying for sure :)

It is surprisingly good! The banana texture has a creaminess, and when frozen, it really is a lot like ice cream. I'm trying to cut back on dairy, so this works well for me since I was an ice cream junkie.

interested in why flax needs to be ground?? can you post?

About grinding flax seeds, more than one site I visited said it's best to grind them to get their full nutritional value. Whole seeds tend to pass through your system undigested. I ground mine using a mortar and pestle. Even though they weren't pulverized completely, I broke the hulls so that should help me digest them better.

It looks like your chef husband is getting into the healthy eating gourmet mode. Some of those Mediterranean varieties of vegetables are really great. I found all kinds of new vegetables when I lived in Italy.

Yes, my hubby loves to cook. And I love to eat. It was meant to be. ;) We have enjoyed exploring the unique veggies you find at Whole Foods. I don't think I'd ever seen fennel at our regular supermarket, but there it was at WF.

Awesome tips! I was gifted an electric pressure cooker and will definitley take it out of its wrapping soon and cook some amazing bean dishes. I love Frozen Watermelon too! Yep, I learned it is easier to peel a frozen banana before you freeze it and they are yummy treats in smoothies too. Just need to come up with a marshmallow substitute and my struggles are gone forever. TOWANDA!!!!

Thanks Lisa! I was leaving the bananas in the skins, but I'm gonna try peeling beforehand now.

Thanks for the buddy request cocobutt, it is great having you on my team weight loss! I was meaning to ask you but have been trouble navigating this part of F.S. I have done it before but then I get lost and think, I'll get to it later when I have time to figure it out again. Have a terrific Friday, TOWANDA!!
