I have been so busy today! After a 16-hour fast, I ate three scrambled eggs with butter and gouda cheese at noon that held me all day. I did some grocery shopping and laundry and then cooked the "bacon cheeseburger skillet" from Liz Williams's "The One-Pot Ketogenic Diet Cookbook" (page 56). Ooooh! It was super!

The recipe includes browned ground beef, cooked/crumbled bacon, well-chopped cauliflower florets and yellow onion, shredded cheddar cheese, beef broth, and heavy whipping cream. All in one frying pan, and it's amazing how good it tastes!

I've cooked more in the last month than I have in the last decade. I recently bought a new set of high-quality, heavy-duty, cookware -- Calphalon Premier Space-Saving stainless-steel (not non-stick surface but cleans like a breeze) -- to replace my old Revereware (45 years old!) and Calphalon non-stick (cheap "Macy's special" from 1997 -- really beat-up!).

Last week, I decided to invest in a Mr. Q 6-in-1 800 Watt Immersion Hand Blender Set with 1500ml Food Chopper, 600ml BPA Free Beaker, Egg Whisk, 600ml Cup (Red) and a Hamilton Beach Spiralizer.

Since I "clean as I go," the kitchen is cleaned up within half an hour of the end of dinner. It helps that the food is delicious and satisfying, and my husband likes it, too. (My husband, to the dog: "I think body-snatchers stole our 'Momma' and left this one, but don't tell anyone!")

My BS average hit a new low today (115 mg/dL) and I exceeded my 20g-carb goal (only 14.7g). I ate a piece of cake at the graduation party last night but did well otherwise. No potato or macaroni salad, and steered clear of the food table after we'd all eaten. I mentioned that I was doing LCHF, to which a friend said, "Not healthy to be on it for too long!" We'll see. "All in good time, my pretty! All in good time!"

I'm enjoying myself, and I "forget myself" when I get wrapped up in my mission!
211.0 lb Lost so far: 74.0 lb.    Still to go: 43.0 lb.    Diet followed 100%.

Bacon cheeseburger skillet sounds like something I would enjoy. I fried cabbage with kielbasa, in coconut oil, I think Friday evening. It was delicious. I think I will try intermittent fasting on Monday. Tuesday I'm always off schedule with my eating, and it seems we eat out while in town on Thursdays or Fridays. And somehow the week ends are off schedule too. I think I can try Mondays and Fridays as fast days.
