So have really upped my veggie carb count. Realized I wasn't getting anywhere near enough. That being said i'm bloody sick of baby spinach. Does anyone have any good ideas on what else to eat to get those veggie carbs? Thanks!

I love me some baby spinach - I eat a large salad w/ lunch and dinner. But I add different stuff to it - not sure where you are w/ Atkins but I add no sugar added mandarin oranges (I use 1/2 a serving), then add dates, seasoned vinegar (I buy at a specialty store but any kind would work). I have also used pears and pecans. I love green beans w/ oregano and garlic powder - steamed and then put on stove top for a few minutes to finish cooking and season.

Zucchini, cucumbers, broccoli, cauliflower, green beans, mushrooms, tomatoes, pumpkin, butternut squash, acorn squash.... :)

Yeah there are all kinds of great vegetables. You pretty much can't go wrong with anything that is leafy and green.
