Draglist's Journal, 20 March 2018

Woke at 219.6, up 3.6 as the water and bulk retention continues. Lots of red wine last night to address it. Targeting about 1800 calories today. UPDATE: Ate a good lunch today but green beans and a large Monster Zero had me at 22 net carbs halfway through the day. Came in the door at 220.6, although the red wine did its job with some bulk elimination. Ate zucchini noodles for dinner, which added more carbs. Ended up with a low-calorie day. Let's see if it pays off in the morning. Waking weight is today's low.

Made some zucchini noodles tonight! Sort of like pasta but I’m still looking for a good substitute!

Spaghetti squash is a great substitute for noodles.

As a tasty alternative is spaghetti squash. You might also try mixing a small amount of thin spaghetti in with the spaghetti squash. Actually makes it very tasty.

There are some substitutes now that are "pretty close." The one I like best so far is Bonza brand, which is made from garbanzo beans. I think they work best with a spicier sauce (not necessarily hot but not bland tasting) but I have also used them in a pasta salad that was pretty good. They have a little different texture than wheat-based pasta, but I got used to the difference pretty quickly. The zucchini is good but just doesn't taste like "real" pasta.

I don't know how you cook your zucchini noodles but I sautee them with oil and garlic for a few minutes, that seems to help for my tastes. I do prefer spaghetti squash though when I have the time.

Skip boiling or sauté. Get the sauce ready and cook the zucchini noodles in the sauce for about 4 minutes.
