Product Review: Amy's Light & Lean Bean & Cheese Enchiladas
I decided to try Amy's Light & Lean Bean & Cheese Enchiladas since it was a low-calorie option (260 calories) for lunch. There is one enchilada and some brown rice with corn. Looks small but after eating it, I am satisfyingly full. It had a really flavor but I do wish there was a little more enchilada sauce to mix in with the rice which got a little dry after nuking it. About 2 inches of the bottom of the enchilada got really had after cooking so I wouldn't recommend cooking it the full time suggested on the box (3-4 minutes, stir, then 1-2 more minutes).
It's gluten and meat-free and only 480mg of sodium which meets my normal 500mg-600mg limit for frozen foods.
Would I buy it again? Defnitely!
