This looks delicious! here's a teeny tip--if you want the taste of bacon, and haven't any in the house, add a drop, no more, of liquid smoke. :) In this lovely dish, you could add it to the beaten egg.

And yet people I know insist that if it tastes good, you can't eat it if you're 'dieting'.
The 'crust' is the egg base, although I've seen this done with a 'pancake' type base made with eggs and almond flour.
Sautéed the mushrooms and onions together with cooking spray (if you like, add bacon or sausage and cook with the mushrooms and onions) until the mushrooms start to release their liquids. Then, add the spinach and cook until the spinach is wilted and most of the liquid has evaporated off. Remove the veggies from the pan, and rinse the pan. Coat the pan with cooking spray and add the eggs, with the heat on low. Once the eggs have started to cook on the bottom, but the top is still wet, add the cooked veggies, spreading them across the eggs evenly.
Cover, and continue to cook on low for another 5 minutes, until the eggs are cooked through. Top with whatever type of cheese you like, and cook until melted.
