I've been trying to up my calories at breakfast. I find myself getting REALLY hungry around 11:30-12. I know this can trigger me to make bad choices, so I need to avoid that by adding more calories to breakfast. My vegetable frittata is tasty and filling (and most of all EASY). However, it is only 175 calories per serving (1 whole egg, 2 egg whites, 1 cup of cooked veg, 1 tsp of vegetable oil). Along with a slice of Dave's Killer Whole Grain Bread that only makes breakfast 235 calories. I'm shooting for about 450-500.

I definitely can't eat any more food. I already feel stuffed with just these 2 things. So I'm trying to increase the calorie density of the frittata. That has been tough because my tastes have changed so much. Any significant amount of fat or salt is just way to much. That rules out a lot of calorie dense food. I just tried adding feta cheese, per a recommendation I saw online. That added 100 calories, but made it way too salty. I feel like I'm eating a straight tablespoon of salt with my meal. It also triples the saturated fat, putting it at 40% of my daily intake for just that one item. I'm not sure where to go from here.

Also, my scale said I lost 10 lbs over the last week. I've never lost 10 lbs in one week, even when I was on the medical diet program. I had my wife weigh herself and it said she had gained 15 lbs. That is definitely wrong. I guess I need to buy a new scale. At least I can now buy any scale I want, instead of having to search for a scale that can measure over 400 lbs.
