Two crazy days in a row: Yesterday, I went grocery shopping at the end of the day and managed to drop my brand new phone, cracking the screen. So instead of going home to make dinner, I had to go to AT&T, and didn't get out of there until 9:30pm. I was STARVING by that time, but I was good: I stopped at the middle eastern restaurant and got chicken shwarma, salad, and a small babaganoush. No rice. No pita. No Coca Cola.

Tonight, I had to go to a family event out in Joliet. We were supposed to have an early dinner beforehand, but the traffic was bad, and one of our family members fell and had to be taken to the ER, and so we ended up with no food and I didn't get home until 9:30 pm. I wanted to bite someone. But I disciplined myself and made a delicious egg white pizza omelet with fresh basil and parmesan. It was yummy.

And then I thought about the fact that I had managed two crazy days in a row without eating a bag of French fries or a candy bar in the car, and I was really proud of myself.

Of course, it doesn't hurt that with IBS, you're so scared of eating something that will land you in the bathroom for 24 hours, snack foods are a lot less tempting! But still, I have to give myself some credit. I did well, and days like this really reinforce my confidence in my plan. Hooray for me!

Thank you all. I'm pretty proud of myself. Just had my second chicken shwarma meal of the week, though. Made a lunch date with a friend and she loves the Lebanese restaurant nearby, so that's where we went: Chicken shwarma, salad, and baba again. Thank goodness garlic is not a trigger for my IBS, so I can eat all the babaganoush I want

Hey folks -- I learned very early in this process: Never have fewer than 2 dozen eggs in the house, and always have something you can throw in an omelet. This has become even more true since the IBS came along. I can't eat pizza, and I really miss it. But you can make a great egg white omelet with parmesan, tomato bruchetta, fresh basil, and maybe a little chicken Italian sausage. Low carb, low calorie, low cholesterol, and unbelievably delicious.

OH my that omelette sounds really good! I use a mild salsa on top of mine. Your version sounds much classier! I just looked at some tomato bruchetta on the shelf in the store and wondered what I could make with it. Thank you!!

Amen, on the eggs!!! I eat so many eggs, I actually bought layer chickens and started raising my own. Very handy. =) You can never have too many eggs. (IMHO)

Mom2Boxers -- I got the bruchetta at Trader Joe's. It's the first I've ever seen with no sulfited vinegar (I'm allergic to sulfites), and it's quite delicious and very low calorie. Annie42 -- wish I could raise chickens!

Ah!!! I think I saw this in Food City. I usually shop Walmart, but I was looking for specialty items and Food City tries to carry organic items as well as specialty flours and seeds. I will have to check out the ingredients next time I am in there.

Hooray for you indeed! You've not only got a good plan - but IMO the biggest part is that you're making that plan work with all of the curveballs that life throws us. You are definitely a roll model Hermoines Mom and I thank you for that. Thank you too for the mention of the Trader Joe's Bruschetta. I've missed that one and I do love bruschetta. I've just put it on my list.

Everyone -- here's how I make the pizza omelet. Separate 5 eggs. Beat together 5 eggwhites plus 1/2 egg yolk with 1 oz of skim milk and 1/4 cup shredded parmesan. Heat a little olive oil in a non-stick pan (it helps to have the olive oil because egg whites have no fat), and pour in the egg mixture. Cut in a couple TBSPs of fresh basil leaves -- I mean,literally, I cut the leaves in with a scissors. Let the omelet firm up a bit and then fold over and cook another 2 minutes or so to firm up the inside. Meanwhile, put 2-3 TBSPs of tomato bruchetta in a small cup or bowl and heat up in the microwave -- just 15-20 seconds. Top the omelet with the bruchetta. If you want meat in the omelet, you can get 2 0z of loose raw chicken or turkey Italian sausage and brown it up in the skillet before you add the egg mixture. Spread it around the pan and pour the egg mixture on top of it. Or, if you have chicken or turkey Italian sausage links that are fully cooked, slice up half of one in thin slices and drop it into the omelet so it's well distributed. If it's fully cooked, all it needs to do is heat up as the omelet cooks. Be careful about the bruchetta you buy: Not all are created equal. Some have lots of oil, cheese, sulfited vinegar, or even sugar. You want to be sure you get one that is just tomatoes and seasonings, so you are not adding extra fat or carbs or calories that you don't want. BTW, you can also use this bruchetta to toss with pasta.
