Hermiones Mom's Journal, 18 March 2016

This was a very strange eating day. First, I once again proved to myself that I am completely incapable of pulling myself together fast enough in the morning to shower, dress, make breakfast for the dogs, walk the dogs, make breakfast for myself, drive the Little Guy to doggie daycare AND get to a 9:30 am meeting on time without arriving looking like a deer caught in the headlights. I don't know what's happened to me. I used to regularly get up at 5:30 am and do 25 things before leaving for work, but somehow I've lost the knack. The result of all this is that this morning I had to run out of the house with Carson, Carson's food for the day, and a thermos of skim milk, and a Luna Bar. I brought 16 oz of milk, because I knew I'd be starving by mid-morning. But of course, that bumped my calorie count up higher than usual.

Then I met a friend for lunch in Little Italy, and I admit it I ate sausage and peppers and grilled veggies -- because I swear if I have to eat one more Caesar salad with grilled chicken because there's nothing else on the menu I dare eat, I'll jump in front of a bus. I usually try to go to places where there's grilled fish, but this particular place had pasta dishes and some meat dishes that were made with ingredients I can't eat, so I went with the sausage and peppers. I ate half and brought half home for my housemate to eat, and she was thrilled. But again -- more calories than usual, but low carbs.

Finally, dinner was my post-St. Pat's meal: I made my own corned beef brisket on Wednesday, with cabbage, carrots and garlic-parsley red potatoes. So tonight I carefully measured 3 oz of corned beef and 3 oz of potatoes, plus a sweet onion, cooked it all up in a skillet, topped it with scrambled egg whites and cheddar cheese. It was so delicious, and so much better than anything you can get in a restaurant.

It all adds up of course, even if my carb count was pretty good. Still, I know I have to drop my calorie count this coming week, or I am just kidding myself: I won't lose weight this way! But that corned beef hash was delicious. It's a dish I don't dare eat out anymore because I am so sensitive to the nitrate/nitrites in commercial corned beef. Last time I ate it from the deli, I was up all night shaking from head to foot with bladder pain so bad I thought I was going to have to go to the ER. Finally, I flushed it out of my system with tons of water. But never again! Now, once a year in March I can buy the no-nitrate uncured corned beef and make it myself. It looks a little odd because it's not the same color that you're used to seeing in corned beef, but it's much , much healthier for me. I have a couple more of them in the freezer, so I can make them later in the year.

But for now, I need to rein myself in a little...

I do love a good corned beef brisket, too. I found sliced corned beef, nitrate free at Sam's Club the other day and it's so good. I also found the nitrate-free turkey bacon. The only thing about Sam's Club is that get these healthy things and then they stop carrying them. Makes me mad. Your days sounded good to me. :)

Sometimes I can't get my act together with multi-tasking but then..it's not the end of the world. I made it thru to the next day and so did you!

The morning part of your journal cracked me up. I'm not laughing AT you but WITH you. I've never been a morning person but somehow managed a schedule similar to yours for many years. I think for many we're able to do it because it becomes habit. Probably if many of us had to do that again, we'd regain the ability after a few weeks. It's a habit I personally don't care to revisit ;-) Even though it was a slightly wonky food day, I'm glad to hear you found a menu choice that kept you away from the bus...or the ER.

Vickie 5966 -- when I was a partner in a communications business for 12 years, I worked about 10 hours per day 6 days per week and then come home and wrote film scripts for my own amusement. I never slept more than 5 hours a night, and I drank about 12 cups of coffee a day. When I quit the business, I also quite coffee cold turkey and started sleeping 8 hours a night. Looking back, I have no idea how I did it -- I actually worked like that from about 1976 to 1998 -- 22 years on 3 jobs. I'm surprised I'm still able to stand up.
