Much more focused now. Chopped up some cucumber, yellow, green and red peppers, some mushrooms, some cheese. Got a big bag of spinach, some asparagus, home made chopped bacon (so easy, who knew?) All containered and ready for me to drop into some beaten eggs. Also roasted half a chicken ready to rock and roll. Quick and easy tip for those of you struggling like I was last week:- If you love cauliflower and asparagus they make quick soups in the blink of an eye. Make one portion at a time with a magic bullet or blender, just add knorr chicken stock and pepper and seasoning if you wish and blend with stick blender or one of the two items mentioned earlier.
