YUM! low carb/gluten free pizza!
so, i bake a lot with coconut flour. mainly banana bread bc it can be too eggy or too dry, so the fruit really lends itself well to the flour... anyway, my friend Leah just gave me a pizza crust recipe! it works so nicely and the coconut flavor is still present, but can be masked im sure by adding more spices. i just made this once so im gonna play around with it more but here is what i did:

2C shredded mozzarella cheese
2Tb coconut flour
2 eggs (organic/free range/cage free/ whatever you prefer)
1/2 teas baking soda
1/2 teas minced garlic (add more plus herbs to hide coconut)

heavely greese pizza stone or cookie sheet with butter or olive oil
take mixture (will be a wet looking cheese ball) and flatten out in a pizza crust shape-leave room for it to rise/expand

bake and 350 (preheated) for 15 min

flip and top with favorite toppings

bake for an additional 15 min. SSOOOOOOO GOOOD!!! and EASY and fast and cheep and healty (low carb) and gluten free!! i cant get enough!
