SO glad I roasted a chicken off on Monday! I made some chicken salad with the leftovers (plenty left from the 3 of us!) and got about 3 cups of chicken salad to add to my salads for lunch. I'm using 1 cup each day, today till Friday. I <3 chicken salad. And mine is by far my favorite. Even though I forgot to get an onion this week at the store, I ended up using onion powder instead. Still good though! It made that plate of greens so much tastier! Even considering just eating the chicken salad by itself tomorrow! ;) But I know I need to get in those veggies, so back on the salad it'll go. Thinking I should start making it more often, especially since there are always bags of boneless skinless chicken breasts in my freezer...I see lots more chicken salad in my future!! Yay!! :) And bonus, DH doesn't like it. More for me!

Yes. I am in the kitchen ALOT these days. All of my breakfast sandwiches are pre prepared and frpzen, I plan for lunches etc. I save so many calories by not eating out! It is a bonus because I LOVE to cook. So, I turn on myy favoritr music or podcasts and go on cook- a thons, adn I am set for the week.
