HELP with a recipe. I am soooo in love with this smoked mozzarella pasta salad from Wholefoods..I used to dream about it while I was in Egypt. Of course when I got home I ate about a gallon of it...sigh. Now I"m trying to figure out a way to have it without the pasta. I figured I could replace the pasta with veggies, but not sure which ones would taste best with the rest of the recipe (which will stay the same...I'm doing low-carb with dairy). Any suggestions would help...Thank you!!

Dressing

1/4 cup grated parmesan cheese
1/2 cup chopped fresh parsley
1/2 cup mayonnaise
1/4 cup white wine vinegar
3 garlic cloves, minced
1 pinch cayenne pepper
salt & fresh ground pepper, to taste

Salad

1/2 lb penne pasta
2 cups packed baby spinach leaves, washed and stemmed
2 roasted red peppers, diced
1/2 lb smoked mozzarella cheese, diced

Directions:

1
Process the dressing ingredients in food processor or blender until smooth.
2
Cook pasta until al dente. Drain pasta in colander and run under cold water until well-cooled.
3
In a large bowl, combine cooked pasta, spinach, roasted red peppers and smoked mozzarella.
4
Toss the salad with the dressing then serve.

You could always sub for Shirataki Noodles or tofu noodles. Bean sprouts or zucchini ribbons also work well for most pasta dishes. There's always spaghetti squash too but I'm not sure if that's low carb enough.
