Did y'all know? Potatoes originate from Peru, which is home to approximately 5000 varieties. There's a million ways to cook potato - how did you have yours this week?

I like a purple potato, oven roasted, cooled and added to a salad. The color always trips people out.

Cjsutherland— good post. I am going to add to it. Did you know that potatoes are a powerhouse of nutrition. They have a huge amount of potassium, a good amount of both protein and fiber. They can provide 70% of your daily requirement of vit C.. they contain iron, 30% of your vit B6 and 12 % of your daily requirement of magnesium.. their starches (carbs) are called resistant starches because your body has a hard time breaking them down so they seemingly don’t spike your blood sugar as much as one might expect.. russet potatoes have the most starch and small red ones have the least. Read all about it. Now obviously it all depends whether you are eating a 1 lb spud from a potatoe bar or a small 3 oz portion . All about enjoying once in a while but not making a meal of it alone. Sorry keto people. Doesn’t work for you at all I’m sure.

Wow Kenna thanks for that info! I had no idea. I was super thrilled until the ‘don’t make a meal of it alone’ part. I used to enjoy a loaded baked potato loaded with butter, cheese and a heaping like of whatever meat I had on hand.

Peeperjj— a change in eating habits, a lifestyle change if you will, is not sustainable if you rely on exclusion and deprivation. From my perspective it is about encouraging people to learn to eat in a sensible, moderated, portion controlled manner then being able to “go out on the town”, enjoy some of their favorite things in a moderated manner. No cheat days required, no guilt necessary, no forgiving yourself required. it is just part of the way you live your life. I have been helping people do this for many years successfully. One of the last people that I mentored lost 175 lb in a year and never felt like she was “dieting”. She has kept the weight off for 4 years. I almost never use the word diet. Dieting is for the prom. This is for your life.

I love potatoes, bake ones and my favorites are French fries , but I don't eat them to often

I am not supposed to eat potatoes as they are in the nightshade group so when I do indulge in them I eat a very small portion. which is within my carb limit. I just don't do it often as it is restricted to me on a non keto diet reason.
