Pepperoni Pizza Made with Fat Head Dough. The dough recipe called for 1.5 cups of Mozz. I did 1 cup Mozz & 1/2 cup of Parm. It was yummy and came in at 4.3 net carbs per serving. :)

looks great, you did not need anything else?? and just bake the crust first to firm it up?? I found a site with some actual dough recipes I will eventually test. a bit more complicated though. actually use baking powder or soda. I think the base is coconut flour.

This is what I did. Microwave 1 cup Mozz, 1/2 Cup Parm, and 1 Ounce Cream Cheese for 1 minute. Stir and microwave for 30 seconds. Stir add 1 egg and 3/4 cup of almond flour. Mix real good (with wet hands) Lay out on parchment and cook for 10 minutes @ 375. Add toppings and cook for 10-20 minutes. I added olive oil to the crust before the toppings to up the fat content.

I have been searching for almond flour here in Mexico for a few weeks. Sometimes it comes in but then it will be weeks before I see it again. I picked up some coconut flour the other day to make one of these pizza crusts. I heard coconut flour is more absorbent and if substituted needs less flour or more moisture. Anyone have recommendations?

You can also grind your own almonds..in a hi speed blender. Please try the fathead dough with cauliflower

THAT looks so good! I have made fathead bagels, but haven't tried the pizza dough yet. One day soon!

@patsypureheart That's probably what I will end up doing. I have my grandmother's old bench grinder and a bag of almonds sitting around. I think I will experiment this weekend. :)
