Low Carb Red Beans & Rice was a success!!
20 net carbs for the whole meal, including low carb corn bread!!

yes they are and I am sure we are all interested in finding a low carb rice and bean.

Don't have a specific recipe, I just sauteed the onions and peppers in coconut oil until nice and soft, then added the sausage and a generous coating of Cajun seasoning. While that heated thru, I heated up the red beans. (I had 1/2 a serving of beans which is around 60 grams or 1/4 cup, for about 7 net carbs.) Then I served it up over a bed of riced broccoli. I think riced cauliflower would be yummier, but my husband doesn't like cauliflower. Lol
