@Pixie722 - Thank you. It totally was. Sometimes something so simple can be so great! Zucchini, red bell peppers, shallots, baby bella mushrooms, baby spinach, walnuts, hulled hemp seeds, great northern beans, and 1 oz. of (Kerry Gold) Gouda, cooked in olive oil.
