We like to boil chopped yellow squash with onions, then mash. Next we fry it in the bacon grease from two strips of bacon, but only 1 Tb. of the grease, reserving the bacon to crumble after it is fried. Takes awhile to get the water out. It's not a lot of calories.

@JosieSchmosie, sounds wonderful! I always boil mine and mash it too. And yes, it does take patience to get the water out but sooooo delicious.
