I love tabouli! A unique one I found at Trader Joe’s is made with riced cauliflower instead of bulgur. Tasty and low carb!

Its a cracked wheat, or "bulgar" wheat, salad. Made with dried mint, lemon, olive oil, and garlic. I love tomatoes, cucumber, and onion in mine.

I love tabouli soooo much. I would go light on the cucumbers though cuz not a huge fan. My daughter makes it sometimes and I have some. Got a Greek restaurant nearby. Might just have to get some later.
