My special Italian Sub Salad - it's what's for lunch!

Think of your most decadent Italian Sub (minus bread),use chopped broccoli and some shredded cabbage as your primary base (adds crunch and stands up well to vinegar for the week), add salami, ham, genoa, pepperoni (all diced), red onion, banana peppers, other chopped sweet peppers, shredded cheese, and toss in a coleslaw-style sauce that has white vinegar, mayo, granualated sucralose,lots of minced garlic,oregano and basil.

We make a huge bowl of it each week and eat on it all week. Keeps well in the fridge for up to 2 weeks. Not pictured is the chargrilled bone-in pork chop seasoned with Adobo that disappeared before I could get the camera out ;-)
