Because I have a huge project I'm working on, I did not cook dinner tonight. I ordered a pizza for my kids and, God love them, they ordered one I would die to eat! BUT, I made myself a quick sandwich with some low fat cottage cheese and now? I'm good to go. AND, I might add, completely guilt free! :) Yay, me!

By the way, Challenge...my daughter ate a bite of my sandwich AND some of my cottage cheese and wants me to pack the same food for her lunch tomorrow. Tell me THAT'S not a small victory for the day!

That is awesome! That is what I do.. I order pizza for my kids and husband and then either eat a "healthy" pizza for me like kashi makes a good one or lean cuisine one. Or sometimes I just eat something all together different. It was really hard at first but it has gotten easier. And now I only eat pizza with them once in a great while.

That is a BIG vicory for the day!! Wow--that's great that your healthy habits are just contagious for the whole family! I have to tell you though that before I got to the exciting part of that sentence, I was thinking, "I hate when they eat my pre-portioned food when they have their own food--it's mine...all mine!" LOL But once I got to the end of the sentence, I realized what you were saying and a HUGE, wonderful vicotry! I can't get behind cottage cheese...so many people love it though.

I made fajitas last night and was eating the Carb balance ones for myself. Well, 2 of my kids asked if they could try my "special" tortillas and guess what - They both wanted one after that. They are realizing that Mom's food is actually pretty good! Can I get a hallelula for small victories?!?!?

Hallelujah! I've slowly been coverting my family over by sneaking my really good "diet" dishes into our family dinners and you would be surprised how easy it was to get rid of salt! I've always used sea salt but one day I said, "We're going to eat dinner without adding salt tonight" and I explained to the kids that their dad has high blood pressure and I'm borderline so it's in their best interest to substitute other flavors for salt. After a day or two of complaining, that was it!

Good for you. My husband tried hummus, he never did say if he liked it he just kept asking what it was made of. I wouldn't tell him because I know he would never eat it. I don't think he will be eating it on a regular basis. I've been sneaking things into their diets sometimes they notice and sometimes they do, but you got to try.

I like it that my husband started wanting to eat what I was eating, and now my kids do too. It's easy to think, Why are they eating my diet food when they still eat cheeseburgers and fries? The truth is though, every time they eat reduced fat wheat thins or light string cheese or cantaloupe instead of chips and candy, we all win. I would rather spend an extra $50/week in groceries (or more) for my family to eat healthy dinners then worry about my kids facing heart disease, diabetes and obesity when they're my age. If I can prevent that by sharing my good habits...geez, that's better than winning the lottery.
