Late start, all good, treadmill last night after working until 8:30. Good times, good times.
Sunny today, will try and break away to swim in daylight. That said, off to a busy start already. The twice baked spaghetti squash casserole is planned for dinner, not lunch, but I'm obsessing already. Used ground turkey again, so pretty low in calories over all. And it's delicious. Mmmm... yeah, obsessing.

Omg Kat , I Absolutely adore spaghetti squash. I had no idea you could twice bake it. I’m gonna look up that recipe I hope I can find it. Well done on your consistency to getting your swimming in💪💪💪💪💪❤️❤️❤️

Naj, I just made it like twice baked lasagne, except I used spaghetti squash and cottage cheese instead of ricotta. I also only sprinkled some mozzarella on top that I broiled vs. layers and layers and layers... oh, I miss lasagne sometimes. lol

Spaghetti squash or is it Squash spaghetti? Doesn't matter....I've never had it. Speaking of lasagna....I haven't made my Lasagna-style enchiladas for quite some time. :-P

Technically, it’s winter squash, Cucurbita pepo, so that’ll add to the confusion.

Slow Meta spaghetti squash is a great substitute for pasta! You just split it in half and bake it till soft. Then scoop the insides out with a fork. It'll come out all stringy like spaghetti noodles. It tastes great and is incredibly filling! I substitute it in lots of recipes that have pasta in them.
