Weight is the same this morning, after adding back in glycogen from going off Keto. Today, I'm making Instant Pot Creamy Chicken with Mushrooms, and asparagus for dinner. I've never made asparagus before. Any suggestions?

Today, I'll be getting in a little more exercise. We've had so much rain and snow that we need to drain about 8" of water off of our 22' above-ground pool cover. I'm setting an alarm for every hour to go out and check that it is still draining well with the little sump pump. At least it will get me out of my recliner a bit.

I made coleslaw for my husband and MIL this morning. It is the Chick-fil-A recipe. They posted it on FB when they quit serving it in their restaurants. REALLY GOOD, but I made today's food plan without remembering that I'd want some of that. Just too a bit to make sure it tasted fine, but will wait til tomorrow to actually work a portion into my Calorie count.

Supposed to be 66 degrees (F) today. Clear for the next two days, then four days of rain ahead. The pool had so much water on it that the weight of the water on TOP of the cover was so heavy that it was displacing the water that was BELOW where the hoses were removed, so water was spilling out of the return holes. The pool is kind of a pain, but I'm glad we had it for the grandkids last summer, since the private community pool was closed.

I'm now FOUR pounds behind where I'm supposed to be for my HealthyWage contest. Hopefully, things will start turning around tomorrow. Gotta get that weight chart heading back DOWN in the right direction!
243.5 lb Lost so far: 15.5 lb.    Still to go: 93.5 lb.    Diet followed reasonably well.

You want to bend one asparagus spear near the bottom until it snaps. The bottom part is woody and not great to chew on. Then cut about the same amount off the rest of them, for me it's usually about an inch off. I like to steam them briefly so they get more vibrant in color. Or oven roast with some olive oil, garlic, salt and pepper. 425 for 10 mins but I like mine more on the raw side. If you want it more tender I would roast a couple minutes longer.

Hi Debbie I'm sure you can turn it around for your contest!! I have a instant pot and I don't really know how to use it but there are lots of videos online. That sound really delicious. The only thing I know about asparagus is it is really terrible if it's overcooked b/c it gets mushy. Have a great day!

I have my pom-poms ready so I can wave them around and jump up and down to cheer you on when you get the scale starting to go down. You don't want me to get on my bandwagon about diet drinks and the other artificial sweeteners (except Stevia probably)killing 50% of the good bacteria in your gut. I love you and only want your best. As you give up those things I believe you will feel better eventually. Even though you have given up Keto, that doesn't mean that sweets or high carbs help you. I believe you will be careful with them.

SWERVE is a good alternative. The package gives a carb count but it is a sugar alcohol and not absorbed.Does not raise your BS, it is slightly less sweet than sugar but I use 1=1 and use it mostly for baking. No one ever guesses that the recipes have been altered. I have way to many diabetic friends so it allows me to bake things when we get together with without feeling bad about contributing to their problems. Portion control and moderation is the winning formula.

Sounds like it's time to rip off that pool top and go for a dive!!! Asparagus....Hmmmm. I've never made it, but I would like it roasted/seared. My ex made it, once. It was good. I think he boiled them in buttered h2o

Roasted asparagus is always good...just put a small amount of olive oil in a large Ziploc followed by rinsed and snapped fresh asparagus. Sprinkle in a little black pepper and some garlic salt and close the bag. Shake bag to coat asparagus, put on a cookie sheet, and bake at 350 for around 25 minutes. This is a general way of making it that can be tweaked, of course. 😊
