cindylynnwho's Journal, 17 January 2009

I did walk for 45 minutes last night. It was freezing outside, though, and I got an earache from the cold, which led to a tremendous head/toothache, and I spent the whole evening in bed. It was worth it, though. I enjoyed the walk and the extra rest.

I did good on the veggies yesterday. I had a sweet potato for lunch. My good friend HDfree gave me a subscription to Vegetarian Times magazine for Christmas. She thought it would give me good ideas for how to get vegetables into Chuck. Actually, I've mostly given up on getting vegetables into Chuck. For now, anyway. He just hates them so much from having so many allergy issues with them that I think he's right that he is better off (psychologically anyway) not eating any of them for now. I figure I will work on the fruits for a while instead, and the whole grains (we mostly have the latter down!). I need to get our juicer fixed. Well anyway, reading VT made me pine for vegetables (and the days when I was vegetarian and vegan) and I became determined to eat more veggies. So last night when I fixed our pizza (on a whole wheat boboli crust) I put kale and tomato on my side (and garlic on both sides). I can't tell you how heavenly this tasted to me. I didn't realize just how much I loved vegetables! Chuck was happy to see me enjoy them as long as HE didn't have to partake of them. Turns out he's allergic to kale, one of my favorite foods, but not so allergic that it mattered that I cooked the garlic with it.

Yay! It's Saturday. Today I hope I can my exercise in mid-day, so I won't get a horrible cold headache again. Have a great day, buddies!

Sorry your walk gave you pains! Maybe some earmuffs would help! I love VT magazine. The photos of the veggies are so enticing! Your pizza sounds delicious! I love kale, tomato and garlic! But never would have thought of putting the kale on a pizza! LOL on "getting vegetables into Chuck". Maybe someday, if you know of some veggies that Chuck is NOT allergic to - you can find ways to include them in other things, so they aren't noticeable (pureed in muffins or something). Your chart is still working it's way down, I see! So close to that blue line!

I second the earmuff idea. Yum pizza. I love veggie pizza. You are doing very well on your diet and exercise. Yes, I made sweetpotatoe muffins one day and my husband really did like them.

Wow...just checking in on you and you have really had an amazing, almost picture perfect journey on your chart. I have a friend at work who's husband won't eat veggies - however, he is not alergic to them. She purees some vegies, freezes them into cubes and "sneaks" them into all kinds of things....including brownies....and he has no clue he is getting all this great nutrition. When he tells her how good something is, she just smiles knowing her little secret.

I only thought of putting kale on my pizza because I have a great recipe in one of my veggie cookbooks for pizza with kale and tofu (let me know if you want it, Amryk-- SOOO good!) Earmuffs-- cute idea, but so weird to me. Did I mention I live in Florida? Maybe I just have a cold-sensitive cavity! I have thought about sneaking in veggies-- but the recipes I have found for that seem like a lot of work for very few veggies. I guess there are ways I could make it easier on myself-- and those few veggies would add up over time and be better than nothing. And thanks for the compliments, guys! Sometimes I feel like I am not losing fast enough but you buddies are always here to remind me that I am doing more than fine! :) Glad I could help inspire you, C.C. Losing one's job is hard so I don't blame you for slacking off on the weight loss, but I am glad you are back! :)

Yes, please, I'd love the recipe! I'm not ready to add pizza back in to my eating yet - I have NO control and could eat the whole thing. But someday I'll trust myself around it again! Oh, yeah, I guess earmuffs in Florida would be a little strange. :)

Amryk, I normally have no control on the pizza, either! It helps to eat with Chuck because he easily eats 3/4 of it and stays skinny as a rail. So, the portion control comes automatically! I'll dig up that recipe again and send it to you soon!
